Print "00Covers.jpg" separately, then print the rest of the images back to back. 
Start with "01_front.jpg" and "01back.jpg" as the two sides of one sheet, then 
"02_front.jpg" and "02back.jpg", and so forth.  

For 8.5 x 11 paper you'll probably want to print in Landscape orientation, and center the image.

Arrange the sheets in order, staple and fold in the middle to make a booklet.
